Fall calendars often are filled with fun weekend trips for college football. It`s a thrill to reconnect with old friends and see your own kids who have moved away to college. We know for sure these kids are excited to see mom and dad especially when parents bring homemade delights for an afternoon of tailgating.
Taco Lasagna
1½ pounds ground beef
1 cup chopped onion
1½ cups chopped green pepper
4.5-ounce can green chili peppers
2.5-ounce package taco seasoning
2 cups taco sauce
3 cups Colby-Jack cheese
10 flour tortillas
Brown the ground beef. Add the onion, pepper, chilis and taco seasoning. Spread ½ cup of the taco sauce in the bottom of a coated 9x13-inch casserole dish. Layer with 5 of the tortillas, folded in half to fit across the dish. Layer with half of the meat mixture, ¾ cup of the taco sauce and 1½ cups of the cheese; repeat. Bake at 375 degrees for 15 to 20 minutes or until the cheese is melted. Serves 6.
