2 cups bow-tie pasta
1 bunch asparagus, cut into ½-inch pieces
1 garlic clove, diced
2 green onions, chopped
1 large green tomato, diced
6 strips bacon, fried and crumbled
2 large red ripe tomatoes, diced
1 cup mozzarella cheese (or more, to taste)
Salt and pepper to taste
½ cup olive oil
- Cook pasta in boiling water until tender. In another pot cook asparagus in boiling water until tender.
- Pour olive oil into a large skillet and set over medium heat. Sauté asparagus, pasta, garlic, onions and green tomato.
- When mixture is thoroughly heated, add red tomatoes, bacon and salt and pepper to taste. Top with mozzarella cheese and allow it to melt. Serve immediately.
