Resolve to ring in good fortune and great flavor with this easy appetizer from Brigitte Nguyen of The Kentucky Proud Kitchen.
Ingredients:
2 16-ounce cans black-eyed peas, drained and rinsed
1 bell pepper, finely diced
1 large tomato, diced, or 1 cup cherry tomatoes, quartered
2 tablespoons sweet pickled jalapeños, chopped
2 cloves garlic, minced
1⁄3 cup sliced green onions
2 tablespoons chopped parsley
1⁄3 cup balsamic vinaigrette
1 tablespoon Worcestershire sauce
Salt and pepper, to taste
Hot sauce, to taste
Preparation:
- In a large bowl, combine the black-eyed peas, bell pepper, tomatoes, jalapeños, garlic, green onions and parsley.
- Toss with the vinaigrette and Worcestershire sauce, and then season to your liking with salt, pepper and hot sauce. Refrigerate until ready to eat.
Note: Who knows for sure if eating black-eyed peas on New Year’s Day will bring good luck and prosperity in the coming year, but why chance it when this dish is so tasty and easy to throw together? This is a great casual appetizer or snack for New Year’s Eve or Day, served with tortilla chips, pita chips or crackers. Leftovers work well as a salad or side dish the following day.
